Do you like baked goat cheese? This is your skinny friend to that dish – made with whipped fat free cottage cheese and part skim mozzarella this is perfect as an appetizer, meal or with eggs – brunch!
Ingredients:
3/4 cup fat free cottage cheese
1 teaspoon minced garlic
1 teaspoon Italian seasoning (I used Dak’s Italian blast)
1 tablespoon Alouette cheese (I used spinach and artichoke)
1 ounce shredded mozzarella
1/2 cup marinara sauce*
1 cup chopped baby spinach
Heat oven to 350.
With a stick blender, whip the cottage cheese until smooth. Stir in the garlic, Italian seasoning and Alouette cheese. My seasoning has crushed red peppers in it and has a bit of a kick to it. Feel free to add crushed red peppers if you use regular Italian seasoning.
In a small cast iron skillet or oven safe dish, put the cottage cheese on the bottom, add the baby spinach, sauce and mozzarella cheese. Bake for 10 minutes. Broil for a few minutes.
NOTE: It will be a bit watery when it first comes out but it will firm up as it sits a few minutes. Toast up some bread for dipping and you’ve got good eats! I ate this for dinner, this would be great as an appetizer, or for brunch with poached eggs on top.
