This was fun to make, its easy, delicious and can be served as a snack, appetizer or vegetarian dish. It’s also gluten free and can be made in advance.
For ingredients-
1/2 cup olive oil
3 medium eggplants
1 cup ricotta cheese
1 large egg
2 scallions or green onions
1/4 tsp nutmeg
1/2 tsp each salt & pepper
2 cups tomato sauce
1/4 cup parsley for decoration
Rinse and slice eggplants lengthwise
Brush with olive oil
Dear 4 minutes on each side
In a bowl combine ricotta, nutmeg, scallions, egg, mix well
Spoon 1 Tbsp of cheese mixture on the wide part of each eggplant
Roll eggplant and place in a oiled baking dish
Pour tomato sauce on top
Bake at 375 for 15-20 minutes
Check to see if eggplant is baked
Bake another 10 minutes if need
