Greg is using the BBQ for this recipe – it was so much fun to make and a great recipe for your family – healthy, quick and oh so yummy!
Ingredients to make Mediterranean Chicken Rice Bowls:
3 boneless and skinless chicken breasts – cut in half
8 TBS Pesto for Marinade
1 1/2 Cup Shaved Cabbage
1/2 cup Cherry or Grape Tomatoes
2 small or 1 large zuchinni, cut inn half and deseeded
1/8 cup Greek or Italian Dressing to marinate tomatoes and zuchinni
Fresh Basil for garnish
Basil and Garlic Rice:
1 cup uncooked rice
1/2 tsp Dried Basil or Italian Seasoning
2 tsp Minced Garlic
Pesto Dressing:
1/2 cup mayonnaise
1/2 cup pesto
2 TBS milk to thin
Salt and Pepper to Taste
