I like this dish because it is so different, the taste is very unique, when you try it you will taste everything at the same time, red wine, sweet, spicy, pickle and nutty. So if you are ready for something that you probably didn’t expect, this would be that dish from the Italian cuisine.
For ingredients-
4.5 cups red wine
1/2 cup honey
2 cinnamon sticks
3 cloves
1/4 cup olive oil
3 lb. chicken (not breast)
1 large onion
2 carrots
1/2 cup green olives
3 Tbsp raisins
1 Tbsp capers
1 Tbsp pine nuts(optional)
3 Tbsp almonds
1 cup red wine vinegar
1/4 cup sugar
1/2 tsp black pepper
1/2 Tbsp crashed pepper flax
1/2 cup chopped parsley
In a pot place wine, cloves, honey, cinnamon stick, simmer 15 minutes
Add to pan olive oil, chicken, salt & brown
Add carrots and onions , garlic , and half of the vin coto, cook 5 minutes
Add almonds, capers, olives, raisins, other half of vin coto, simmer 10 minutes
Mix vinegar and sugar, add to pan
Bring to boil, simmer to a glaze
Transfer to plate, decorate with parsley
