I don’t only Fire landlords and help families buy their own home! I also teach traditional Italian cooking to my grandkids and I usually take the fun time that they are enjoying to teach other subjects as well ranging from math and science to history, sports and just about anything that will peak their interest and make them want to learn and know more.
We cook anything fro Pizza from scratch to fresh homemade pasta which always creates a fun time for all the kids.
Here’s the eggplant rollatini recipe video!
Eggplant rollatini is only different from eggplant parmesan because of the extra ingredient of the filling which is the exact same filling that I use in my lasagna recipe. I enjoy teaching how to cook with kids just like I did with my own grandpa Tony Maccarone (pronounced Macaroni)!
Simple Italian cooking is to be enjoyed and experienced with as many senses stimulated as possible! Smell. Taste, Hear the music, Make it colorful and Feel the feelings of cooking something special with your family!
Eggplant Sliced thinly
Dredge through eggs and Italian seasoned breadcrumbs.
Then fried till golden brown and salt them.
Next, create the filling. I make this filling exactly the same way for lasagna.
Whole Milk Mozzarella 3 lbs
2 eggs
Parsley
Romano cheese
Parmesan cheese
Salt
Petter
Italian seasoning
Mix well!
Next, just follow the videos! put a generous coating of the filling on the fried eggplant, followed by mozzarella and then rolled and place a toothpick to hold together.
Next step is to layer the oven-safe bowl or pan with your favorite tomato sauce and place the eggplant rollatini on top and add a layer of tomato sauce on top.
The next layer is more mozzarella, parmesan and romano cheese, light salt and pepper an parsley.
Cover with aluminum foil and back for 25 minutes at 350 degrees, then remove the aluminum foil and bake for another 14 minutes.
Then enjoy – reminding everyone to be careful of the toothpicks!
In the this video, the kids were wearing Dodger shirts because one of their teachers is a Dodger fan. When grandpa (me)realized what they were wearing I made them put on aprons over the shirt. Sorry Dodger fans, but this New Yorker originally from the Bronx found wearing Dodger shirts sacrilegious and unacceptable – LOL. I took that time to provide a lesson on the Dodgers original name. Yes, the Dodger’s original name, actually was the Brooklyn Bridegrooms!
