in this video ill be cooking Italian sausage filled egg-less tortellini with caponata sauce and schiacciatine croccanti al rosmarino (crispy flatbread with rosemary)

RECIPE
SERVINGS 3
EGG-LESS PASTA DOUGH
100ml water
250g type 00 flour
1tsp table salt
2tbs olive oil

TIP the dough starts off very dry, persist with kneading it because a wet dough will ruin your pasta machine

CAPONATA
2 red capsicums
2 yellow capsicums
1 red onion
3 cloves garlic
5 tomatoes
2 long red chilis
1/4 bunch fresh basil
1/4 bunch fresh parsley
2tbs baby capers
1/3cup red wine vinegar
3 sprigs thyme
3 sprigs oregano
black peper and salt to taste

ITALIAN SAUSAGE FILLING
500g pork mince
1tbs fennel seeds
1tbs sweet paprika
1 clove garlic
1/4 bunch sage
1/4 bunch parsley

CRISPY FLATBREAD WITH ROSEMARY
1.25cup type 00 flour
1/3cup semolina
2tbs olive oil
1/2 cup water
2 sprigs rosemary
olive oil to drizzle
sea salt on top
cracked black pepper on top

GARNISH
roasted pine nuts
shaved parmesan
