Recipe for chicken in white wine cream sauce with spinach and mushrooms:

– 2 chicken breasts
– 1 pinch salt and pepper
– 2 tablespoons olive oil
– 1 tablespoon salted butter
– 1 package mushrooms, washed and cut
– 2 cups raw spinach
– 1 teaspoon or one clove minced garlic
– 2 teaspoons Italian seasoning
– 1 tablespoon all purpose flour
– 1/4 dry white wine (this can be substituted for juice from 1/2 a lemon)
– 1/2 cup chicken broth
– 3/4 cup milk/or heavy cream
Season your chicken on both sides with salt and pepper and place in frying pan with olive oil on medium-high heat. Brown chicken on both sides (about 5 minutes per side) Place chicken in baking dish to cook in a 350 degree Fahrenheit oven for 10-15 minutes to finish cooking.
Add butter and mushrooms to pan, cook mushrooms for 5-6 minutes, add spinach gradually and cook for another 2-3 minutes. Add Italian seasoning and garlic to pan combine with vegetables and cook until fragrant (about 2 minutes) Sprinkle flour evenly across pan to coat spinach and mushroom mixture, cook for about 1 minute. Add wine, broth, and milk to pan and stir for 3-5 minutes. As the pan heats back up the sauce will thicken.
Spoon sauce over top of chicken. Serve with rice, and/or favourite vegetable side.
