1 lbs ground wagyu beef
1/2 white onion
3/4 TBSP kosher salt
1/2 TBSP fresh ground black pepper
1 1/2 tsp smoked paprika
1 tsp ground cumin
1 tsp red chili flakes
50/50 blend of fontina and jack cheese
flour tortillas
maldon salt to finish
