Easy NEW YORK ITALIAN BREAD│INSTANT POT Dough

Delicious homemade Italian bread is super simple to make, requiring only a few ingredients. I grew up in Brooklyn, NY – and bread was a major part of everyday living. This bread has the perfect texture. Crispy outside, light and airy inside. I’ve made an Italian bread before, and I’ve linked it below – but I wanted to revamp the recipe, making it even easier with fewer ingredients. This bread also freezes beautifully. Reheat in a toaster or conventional oven. This bread is also vegan – Italian bread is naturally vegan – so everyone you know can enjoy this delicious bread! INGREDIENTS:
Dough:
1 ¼ cups Warm Water (105F-110F)
1 tablespoon Active Dry Yeast
1 tablespoon Cane Sugar
1 teaspoon Pink Salt
4 cups Bread Flour

Topping:
2 tablespoons Water
2 tablespoons Sesame Seeds (optional)

Additional ingredients:
1-2 tablespoons Corn Meal (for bread/pizza stone)
1-2 teaspoons Olive Oil or Avocado Oil (for greasing bowl for proofing)

INSTRUCTIONS:
1. Combine warm water, sugar and yeast in a bowl and stir. Set aside for 5 minutes.
2. Combine dry ingredients in the bowl of a stand mixer. Add bloomed yeast. Attach dough hook and knead dough for 5-7 minutes. You may need to scrape down the sides a couple of times.
3. Place dough in a greased bowl or greased instant pot liner. If using instant pot, set to yogurt setting (107F) for 30 minutes. If using a non-drafty area, cover dough with plastic wrap and set aside for 2-3 hours until doubled in size.
4. Preheat oven to 450F with bread stone inside the oven. If you don’t have a bread or pizza stone, use a baking pan without preheating the pan. Shape dough to desired form. If braiding, cut dough into 3 equal sections and braid as if braiding hair. After dough is shaped, cover and rest for 15 minutes. Sprinkle stone or pan with cornmeal. Brush dough with water and sprinkle on sesame seeds (optional). Place shaped dough on stone or pan and bake for 25-35 minutes. Remove from oven and allow to cool. Slice and enjoy!
