Doughnuts (or Donuts) are one of the most popular desserts around the world. It sees so many versions around the globe, but one of the best types of donuts is vanilla custard cream donuts. And I’m telling you that you can make it at home from the scratch, from the dough to the delicious vanilla custard cream. You will see that I add lemon into vanilla cream? Why? Cause it gives it a totally better taste.
Ingredients:
Dough:
flour 500g. (sifted)
salt 1/2 teaspoon
warm milk 200ml.
dry yeast 7g. (or fresh yeast 25g)
sugar 50g.
butter 50g. (softened)
2 eggs (medium size)
lemon extract (optional)
oil (sunflower, corn) 700ml – 1liter
Vanilla (and lemon) custard cream:
milk 250ml.
2 egg yolk
zest of one lemon
juice of a half lemon
sugar 75g.
corn starch 20g.
1 vanilla bean
Instructions:
1. In a bowl, add the sugar and dry yeast, then the warm milk and let the yeast activate for about 5 minutes.
2. In a different bowl (or stand mixer) sift the flour and add the salt, then combine.
3. Once the yeast is ready, pour the mix on the flour and knead (or mix, if you use a stand mixer) for 5 minutes.
4. Whisk 2 eggs and add a few drops of lemon extract. Then add them into the flour mix. Knead until you get a homogeneous dough (it should be sticky).
5. Add the softened butter and continue kneading for the other 5 minutes or until you get a non-sticky dough. If your dough seems too sticky, add 1 or 2 extra flour spoons. (Don’t add too much flour; add it one at a time)
6. Cover the dough with food film and let to rise in a warm place for 1 hour and a half (or until it doubles the volume).
7. Once the dough is ready, roll it until you get a 1 cm thickness. Cut it into small-medium round shapes, then cover them with a clean towel and let to rise for 30 minutes on a floured surface.
8. Pour the oil in a large pan and heat up to 180°C
