Today we will show you how to make Pasta Fagioli! Pasta Fagioli is a great recipe, especially for vegetarians and Catholics during Lent! It can be made 100% Meatless!

Start off with 2 Tablespoons of oil in a big pot
Add
-carrots (1/2 Cup)
-onion (1 Cup)
-celery (1/2 Cup)
Sautee 2 min
Add minced garlic and saute for one min
Add 32 oz of veggie or chicken broth
Chop up a can of San Marzano tomatoes and add it in
season with salt and pepper
Simmer to boil
Add cannellini beans
Add Ditalini
(Half a box – a Full box depending on how soupy you like it!)
Cook pasta for half the time on the box
Let it rest for 30 min covered and off the burner.
Add fresh parsley
Add Parmesan cheese
Enjoy!
