Today we headed downtown to meet Steven Wong of Aqua Best to grab one of his comfort sandwiches, a throwback to his childhood growing up on the LES.
We pulled up to Regina’s Grocery and ordered the “Uncle Jimmy” โ Prosciutto, Fresh Mozzarella, Hot Soppressata, Arugula & Reginaโs Hot Pepper Spread.
Itโs simple, classic, and exactly what you want: high-quality ingredients doing all the work.
For the pairing, we went with one of Davidโs favorites: Yves Leccia “E Croce” a Corsican Vermentino from the Patrimonio AOC in Corsica. With bright acidity and a clean, coastal feel, it cuts through the richness of the cured meats and balances the spice and salt perfectly.
Between bites, Steven broke down his world at Aqua Best โ supplying seafood to hundreds of spots across NYC, from neighborhood favorites to Michelin-starred kitchens. A guy who knows great productโฆ and clearly, a great sandwich.
