  1. It's been hard for me to prepare authentic-tasting Italian these days. The quality and origins of the seasonings and ingredients are subpar as you indicated. And to add insult to injury, it's difficult to purchase those ingredients, at lease in U.S. neighborhoods. Perhaps I need to take a road trip to an Italian grocer.

  2. So basically your title is completely contradicting what you're "explaining" in the video…

    The ignorance is immense, having such strong opinions about certain subjects as well as trying to show people how to cook many different cuisines.

    While knowing so little about them and basing them off a "similar" country/region is just disrespectful.

    Yes, many countries have similar roots for dishes and cultures but that doesn't mean you completely disregard those same things and just saying "my twist my take on it" that's just being lazy and rude and is a bs excuse.

    Changing certain ingredients or techniques based on your access to produce within reason is normal for everyone everywhere.

    For example, just putting a instant beef bouillon gravy on a simple Japanese omurice.
    When many many many people have informed you that the sauce is usually a demi glace, with the addition of ketchup, Worcestershire or similar ingredients to add sweetness and acidity. That's just laziness and disrespectful.

    I've watched Quang for many, many years now. All the way back to the gym days and multiple meals in one video!

    I wouldn't say I'm not a fan as I've definitely been watching long enough 😂, more so just sometimes it irks me when his ignorance is taken so far. "Ignorance is bliss" as the say right?! Do better Quang, c'mon

    After all these years I just felt like something had to be said… 🤷

  3. Well, you see, Italians try to cook the best food they can, in order to eat it. You make food to get views.

  4. Spent 3 months in Italy, Rome, Florence and Milan. Soon as I came back home, I hit a straight up spaghetti and meatballs Italian American joint, ordered a big ass NY pizza, chicken parm, meatballs and baked ziti. Boy did I miss real Italian food.

  5. 4 00…… Actually, they don't really add much garlic in mainland cooking. It's weird. I don't know if that's a new thing or how it's always been.
    7 15…….. San Marzano tomatoes are just the best of the best. It has something to do with the soil in that region. Could be mineral deposits in the areas or really good water flow into the area or both….. Or maybe they've just perfected the cultivation.

  6. The thing is, Something authentic means something people normally do in their country and to not impress anyone. Sometimes, "authentic" just became a branding label to please anyone or to market their product that blurs what authenticity should be. If you see "authentic Italian" restaurant in your country, there's a big chance it's a more glorified version of it that everyday people in italy don't even do. It's often standardized into something special to fit a high class dining restaurant because italian restaurants are novel in foreign countries, but very casual in italy.

    it's like for example, in the vietnam, something "italian" or a bolognese, despite being an average man's staple in italy, already counts as a luxury or a novel food. So when there's a bolognese shop, it's not marketed as the everyday common italian eatery style but instead, making it extra special. But in reality, authenticity is just diverse, claiming theirs is authentic Italian just speaks for all.

    So that's basically thesame with tacos too. Because it's special in different countries, it's used with higher quality meat, more fillings than usual, more seasonings, etc and call it authentic. It also risks people getting disappointed about the real things in the origin. It's even ironic that local food getting glorified as if it's in a foreign country in the country gets called inauthentic by locals because it looks too glorified for tourist's tastes

  8. You're 100% right about Italian food. Its about each individual ingredient being fresh and top quality.

    Ive had amazing Italian food and every single ingredient was incredible on its own. They dont need all the spice (especially when spice was originally used to hide the taste of rotting meat) when the ingredients are top quality.

  10. Real Italian food are high quality, and subtle. You can taste the quality of each ingredients. Very different from American Italian which are more in your face and huge flavors that overtakes individual ingredients. I like both styles and philosophies.
