Join me at the Hilton Singapore Orchard for Stop 49 of my quest to dine at every Michelin-recognized eatery in Singapore! Today, Iโ€™m taking a “Nozza” around Osteria Mozza, the only Asian outpost of the legendary American chef Nancy Silverton.

Bringing the soulful, one-Michelin-starred vibes of her Los Angeles original to the heart of Orchard Road, Osteria Mozza serves up a masterclass in Californian-Italian cuisine.

Whatโ€™s on the Menu?
From the open kitchen led by Executive Chef Peter Birks to the dedicated Mozzarella Bar and wood-fired pizza oven.

Hereโ€™s the breakdown of our five-course showcase:

Antipasti Magic: We started with the “wonder wand”โ€”breadsticks wrapped in truffle butter and Parma hamโ€”and Nancyโ€™s iconic Caesar salad.

The Singapore Exclusive: Don’t miss the sourdough topped with burrata and a house-made crispy garlic chili oil.

Pasta Perfection: We tried the Fonduta Ravioli (drizzled with 25-year-old balsamic from Modena) and the Orecchiette with fennel sausage and Swiss chard.

The Mains (Secondi): A perfectly executed Wagyu Tagliata and a Sea Bream with skin so crispy, it puts potato chips to shame.

The Sweet Finish: You can’t leave without the Silverton classicsโ€”the Rosemary Olive Oil Cake and the famous Butterscotch Budino with Maldon sea salt.

  1. Sam Lynas a.k.a. Fedby will be needing Elasticated Trousers, to be able to complete the Michelin Munch in SG. The happy non-judgemental reviews are entertaining (especially the bad puns/ dad jokes) … i hope Sam continues this series, as it is a great way to profile SG food (much better than those "exposing Michelin" crap reviews from other influencers)
