Ingredients:
7 Thin pork chops
2 Lemons (organic & unwaxed)
Extra virgin olive oil
2 tbsp Butter
1/4 cup White wine (dry)
Flour
Salt and pepper
Fresh parsley

Directions:
1. Pound the pork chops until they are thin and uniform. Lightly coat each side with flour, shaking off the excess.
2. Sear the chops in olive oil for about one minute per side.
3. Season with salt and pepper, then pour in the white wine. Let it simmer for a moment to allow the alcohol to cook out.
4. Add the juice of both lemons, the peel of one, and the zest of the other. Let the flavors come together for about one minute.
5. Stir in the butter and fresh chopped parsley. Serve immediately

I apportion the meat and freeze the bags of meal portions for use during the month. I also purchase cost effective food safe restaurant supply plastic freezer bags. These are NOT name branded as in the regular grocery stores. I buy a package of 100 units for less than $5 Canadian.
