I like Henry Weston's 8.2% Cider, it doesn't taste like alcohol, it's like apple juice you get wasted on after two bottles lol.

Cheddar is what you put in a sandwich or on toast…. Just your middle of the road cheese and kids like it. In the morning if I wake up and fancy some cheese, I go for the cheddar.
As a Brit, I like Stilton with slices of Golden Delicious apple
If you liked the stilton then you would like Shropshire blue, slightly less intense but just as creamy, both go well with pear and apples.

That mature cheddar would have tasted really good on a cracker with a bit of ham and bit of apple and/or some type of pickle. If you make a broccolli soup, put some stilton in there for the final minute of cooking. Not a big fan of brie, I find it a bit boring, Goats cheese would go great in a simple salad. Enjoy!

To improve the cheddar, butter the crackers and try it with quality ham! Double Gloucester is another good cheese!
Shropshire Blue cheese is a good alternative to Stilton. It's a slightly more restrained flavour, and the amber colour with blue veins is quite striking.
Stilton and port are a match made in heaven although a full bodied red is a good substitute.

Glad you enjoyed these. The traditional pairing with Stilton is a nice port. As for Cheddar, I'd highly recommend going to a delicatessen counter and getting a slice of nice, strong vintage extra-mature from a round. Of course, you can always ask to try a little of each one they have before making your choice. Another nice blue to explore would be Shropshire Blue. I would also recommend a good Double Gloucester with chives. Happy sampling!
