Every year, four percent of all cheese produced globally is stolen by organized crime networks across Europe. In Italy, a single wheel of aged parmesan takes three years to make and sells for up to 700 dollars. Hijacking one truck can be worth millions. It got so out of hand that Italian banks started accepting parmesan wheels as official loan collateral. There are warehouses in Modena with armed security protecting nothing but cheese.
