  4. Sad that Bourdain (who admitted at the dining table to being only 14 years younger than his Basque chef hero) died within a year of making this film. That dinner is in some ways an epitaph, especially as he can’t have known that his older hero would outlive him.

  5. Basque is used only in Basque speaking zones, not in all Basque Country. Prices, for everything, including restaurants, are much much higher in the Basque Country and quality is not necessarily better. Galicia and Asturias are as good in cuisine and have much lower prices.
    Basque languaje is probably old Iberian pre Roman languaje.

  6. A Basque friend is truly a real and loyal friend for life. A Basque doesn’t just give you his friendship the moment they meet you, it takes a long time, but when they do it’s forever come hell or high water.

I am basque and i appreciate the love for the land and the food in this beautiful documentary but it's worth pointing out that a lot of the allegations here about our history and language here are fictional and exaggerated. What we know of our history is fantastic enough, there's no need to go hyperbolic, although we Basques tend as a society to lay strongly on that hyperbolic myth.

    Basques aren't the descendants of Cromagnons that lived in what today are the Basque provinces 25 thousand years ago… Basques are the same mix of WEHG, EEF and Yamnaya peoples as everyone else in Western Europe and, particularly, in roughly the same ratios as the rest of the Iberian peninsula and Southern France (Southern French being genetic kin to the Iberians).

    Our group of languages is not older than the Indoeuropean group that surrounds us. What makes it distinct is that its predecessors existed in Iberia and Southern France far longer than the Indo European languages. But we don't know when or how it appeared. It could be an EEF language or even a mesolithic language. It could be part of a larger group that included Iberian languages or be a distinct group. We don't know. But it has survived and that alone is cool.

    Also its current extension is not it's maximium extension. It was spoken in what today is Rioja, Burgos and much of the Pyrenees in Aragon, Gascony and maybe all the way to Western Catalonia. And we don't really know in which of this regions originated and whether today's basques are descendants of its first speakers or rather of peoples that were Basconised via migration or conquest. We don't know.

    What we know is that basques were the first whalers, great seafarers , warriors , industrialists and politicians and that we played a protagonist role in the reconquista, the Spanish empire of the golden age, and even the independence of the Americas, on both sides of the civil wars , as well as the Peninsular wars, the Carlist wars and many other conflicts, inluding Francoism and Antifrancoism.

    Our story is the story of Spain, and also vquite important in the history of the French kingdom, but im getting tired of typing. Point is, sometimes tired nationalist mythos of exceptionalism puts a veil on an equally if not richer and actually historical events. Reality is bigger than fiction.

  8. I used to watch Karlos Arguiñano, the Spanish Julia Child or chef Jean Pierre. Through this short documentary I found out that he actually grew up, and to this day has a restaurant in Zarauz, right next to Santo Domingo. The more you know !

  10. I am Spanish. A foreign documentary programme about (still) a part of northern Spain that starts with background music that is not flamenco or some "Latin" guitar like sound deserves enormous respect.

  11. The Basque country is wonderful, but I'd like to point out the all of the regions along the Spanish Atlantic coast offer stunning scenery and incredible food. Those other regions are: Cantabria, Asturias and Galicia. Paradise on earth. But rainy. Very rainy 😂

  12. This was special place for Anthony Bourdain who unfortunately left us whilst doing what he loved best. We all miss you.
