Spinach and green garlic Mac and 🧀cheese

You HAVE TO MAKE THIS. trust me, with the freshest green garlic in season, this one is a must have

Blanch 1 bunch spinach in hot water and then plunge it in ice water to stop cooking.
Blend it together with 1/2 cup of chopped fresh green garlic into a puree and keep aside.

In a pan that is ovenproof, heat oil and butter and saute 1 tbsp garlic (the white part of the green garlic)

Boil 1 cup of macaroni for 7 mins and keep some pasta water aside.

To this, add 1 1/2 tbsp of plain flour and cook for a min.

Slowly add 1 1/2 cups of milk and let it heat up and thicken on low – medium flame.

Flavor it with chilli flakes, parsley, dried oregano or any Italian herbs of your choice.

Once thick, add 1 cup of a mix of cheese of your choice. I’ve used cheddar, Parmesan and my good old Britannia processed cheese!

Mix it all up and add the puree. Adjust the consistency with the pasta water and season with salt and pepper.

Take the pasta off the pan. Now, mix together breadcrumbs with a little minced garlic. Top the pan with the breadcrumbs and a lot more mixed cheese.

Bake at 180C for 15 mins or till the top browns. Let it cool for 5 mins before you dig in!
