A loaded pasta salad with all the flavors of a grinder sandwich tossed in a delicious vinaigrette. Perfect for hosting, meal prep, or bringing to a party.
Ingredients:
• 12 oz short pasta (rotini or fusilli)
• 1 cup cherry tomatoes, halved
• 1/2 cup pepperoncini, sliced
• 1 1/2 cups arugula
• 1/2 cup pepperoni, chopped
• 1 cup assorted Italian deli meats (salami, turkey, ham), chopped
• 1/2 cup shredded or shaved parmesan
Vinaigrette:
• 1/3 cup olive oil
• 3 tbsp red wine vinegar
• 1 tsp Dijon mustard
• 1 tsp honey
• 1 clove garlic, finely minced
• 1/2 tsp dried oregano
• Salt + black pepper to taste
Instructions:
1. Cook the pasta in salted water according to package directions. Drain and rinse with cold water to cool completely.
2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon, honey, garlic, oregano, salt, and pepper until emulsified.
3. In a large bowl, combine cooled pasta, cherry tomatoes, pepperoncini, pepperoni, and chopped deli meats.
4. Pour the vinaigrette over the salad and toss until everything is well coated.
5. Fold in the arugula and parmesan just before serving.
6. Taste and adjust salt, pepper, or vinegar as needed. Chill for 30 minutes if you have time for the best flavor.
