In Mexico City, the line between passion and crazy is so fine, it practically disappears. The two artisanal chefs I meet in this episode of Pati’s Mexican Table walk that line every day, putting their whole heart into their every creation.
First, I visit panadería Rústico in Colonia Cuauhtémoc, where Iván Ortiz and his brother Germán obsess over every detail of their baking, starting with growing their own wheat! They made me feel right at home greeting me with café de olla. Over the best renditions of quiche I can imagine, Iván shared his love of the craft and dedication to building his business which he started by selling his bread on a bicycle.
Then I head to Casa Morgana in Colonia Roma to meet Kirén Miret, a successful TV producer turned ice cream maestro, after spending time in Italy learning how to make gelato. We talk dreams, risks, and the courage it takes to start something new — all the while sampling her bold, inventive ice cream flavors.
Back home, Juju joins me in the kitchen to help me make my own tarta – a riff on a classic ham & cheese quiche with pickled jalapeño and habanero thrown in to please my heat-loving Mexican palate. If you make it, you can add chiles to your liking! For a sweet ending, we make galleta María and cajeta ice cream sandwiches dipped in chocolate.

I love the baker's story of learning to bake as a child, and how wonderful that he works with his brother! The quiche looks so good! You know I love watching you cook with your boys, even the older one (your husband, lol)! Kirén's story is great also, and she has such enthusiasm! Those ice cream sandwiches look amazing!
