Chicken Focaccia Sandwich

I was driving up to the farm and called mama to see what she was up to… she goes, “I’m making focaccia.” 😍

I said, “I wish we had some chicken so you could make me a sandwich…”

She laughs and goes, “Bello, don’t worry… I have everything for you.” ❤️

And just like that, this beauty came together 🥪🔥 fresh focaccia, crispy chicken, and all the love you can taste in every bite.

Nothing better than a mom who already knows what you’re craving before you even get there.

Focaccia

Ingredients:
• 5 cups all-purpose flour
• 3 tbsp dry yeast
• 1 tbsp salt
• 2 ½ cups warm water
• ¼ cup olive oil, plus more for drizzling
• 3 tbsp fresh rosemary, chopped
• Flaky salt

Instructions:
In a stand mixer, combine flour, yeast, salt, water, and olive oil (reserve rosemary). Mix for 6–8 minutes until a smooth dough forms. Transfer to an oiled bowl, cover, and let rise for 2 hours. Deflate and let rest for an additional hour.

Transfer dough to an oiled, floured pan. Stretch to fit and dimple the surface. Top with rosemary and a drizzle of olive oil. Rest for 20 minutes, then sprinkle with flaky salt.

Bake at 400°F (200°C) until golden brown. Cool slightly before slicing.

Breaded Chicken

Ingredients:
• 4 large chicken breasts, sliced thin
• 2 eggs
• ½ cup breadcrumbs
• 4 sprigs parsley, finely chopped
• Salt and pepper, to taste
• 2 cups vegetable oil

Instructions:
Pound chicken to even thickness. Whisk eggs with parsley, salt, and pepper. Dredge chicken in egg mixture, then coat in breadcrumbs.

Heat oil in a skillet over medium heat. Fry cutlets for 2–3 minutes per side until golden and cooked through. Drain on paper towels.

Assembly

Slice focaccia in half and spread basil pesto on both sides. Layer with chicken cutlets, sliced tomatoes, arugula or spinach, and burrata. Finish with a drizzle of Calabrian chili. Close, slice, and serve.
