Noni’s Italian Sauerkraut

2 packages (14 ounces each) Hillshire Farms Kielbasa Polish Sausage
1 large onion, diced
4 teaspoons minced garlic
4 jars (32 ounces each) sauerkraut
3 cans (10.75 ounces each) chicken broth (undiluted)
1 can (8 ounces) tomato sauce
1/2 teaspoon ground cinnamon

Place the sauerkraut in a colander and rinse well with water to get all the brine out of it. Allow it to sit for a while in the colander to drain.

Cut the kielbasa into 1/2 inch disc coins. Place these in a large skillet with some olive oil to brown. When done, take the sausage out of the skillet and brown the diced onions in the leftover sausage grease and drippings. Sauté until lightly browned.

Add the minced garlic and sauté for one more minute. Add the sausage back in. Stir in the sauerkraut, chicken broth, tomato sauce, and the cinnamon. Simmer over low heat for at least one hour. Stir often. Add a fourth can of chicken broth if the sauerkraut cooks dry.

The longer it cooks the better it gets and is better when eaten the next day so that the flavor is blended well.

  2. Big ole pile of mashed potatoes and white beans……YUMMY! I make my sauerkraut very similar to this recipe….I don't put tomato sauce though, If it isn't bavarian sauerkraut I will add a bit of sugar or apples and caraway seed.

  7. I can see how that would be comfort food. I'm a huge fan of both sauerkraut and smoked sausage. I'm making that but I'll have to cut the recipe in half. I bet the leftovers are over the top delicious.

  8. I looked Noni up online to find the correct pronunciation and found both NAH knee and NOH knee are acceptable. I grew up pronouncing it NOH knee. In fact, I want to name my next little female dog/cat “Noni Rose”. I’m skeptical about this dish, but I do love sauerkraut. I grew up eating sauerkraut with sausage or ribs and kluski. Mother was Polish. I’m very curious. Thanks for sharing. My aunt Cisa Bandoni never made such a dish. She was from northern Italy and was a marvelous cook and a beautiful blond blue-eyed Italian. I will be trying this, but I will definitely cut in half or even 4ths. Rather that a ring of sausage I’ll buy the bun size links. I trust Johnsonville. It’s what I buy since I can no longer shop at the butcher I grew up with. He made smoked and unsmoked Polish and delicious potato sausage. Yummy.

  10. Hey Tom an Melissa,this looks really good. Will be trying this. We also like Sauerkraut cooked down in Sweet relish an onions an just a little sugar mixed together and cook it for a little bit until it is really tender , an put it over the top of your hotdogs, really good. An it's also good as a side dish for your peas.. Thank y'all an Blessings always.

    That jar opener is funky! I don't believe I've ever seen/heard of such a jar opener.

    I don't have sauerkraut very often. When I do it's just sauerkraut – not made into anything else. I'm gon' save this one.
