From the stunning W South Beach, the Chewed Up crew welcomes acclaimed chef Scott Conant for a conversation (and cook) rooted in simplicity, technique, and deep culinary tradition.
Scott shares the story behind his now-iconic reputation (yes, including the “red onion guy” moment), while revealing the philosophy that defines his cooking: less is more — but only when done right.
In the kitchen, Scott prepares a delicate ricotta-based gnocchi packed with broccoli rabe, spinach, and basil, paired with a silky butter sauce stabilized with a clever cornstarch technique and finished with his signature Martone Street marinara. Along the way, he breaks down essential techniques — from properly salting pasta water (hint: not like the ocean) to extracting maximum flavor from simple ingredients.
The episode blends humor, heartfelt storytelling, and serious culinary insight, as Scott reflects on family, his daughters, and the inspiration behind Martone Street — a tribute to the home where his love of food began.
It’s a masterclass in thoughtful simplicity — proving that the most powerful dishes often come from restraint, intention, and great ingredients.

Okay..This was my favorite episode by far. I love you 3, but wow Scott brings the heat to the show..lol Bring him back!!!!! If not I will still be a loyal fan…🥰🥰🥰🥰
Really enjoyed today's show. Love Scott and can't wait for his sauces to hit the larger market place.
Constantly contradicting Batali regarding NOT salting the water like the ocean 💀
That was a great episode.
LOVE
Best laugh session yet! Love that you all can laugh at your own stuff. Scott is really a kind soul! I met him on a cruise and accidentally mixed him up for Tyler Florence. He didn’t call me out. I later realized my goof up and found him to apologize. He was so graceful and kind to me.
Can Scott also market the gnocchi? It looks fabulous!
WAIT WHEN TF WAS THIS A THING! Where have I been
Sorry…I'm paying for a well prepared meal. I've sent food back: dirt on my salad, food so salty Lot's wife couldn't eat it, someone else's order. I'll forgive many things, but I'll not eat and be quiet. The back of the house needs to know if something went sideways.
Scott has the best smile in television.
I would have loved to see him make the ricotta gnocchi..
Love the show but the AI thumbnails are too much
Scott Conant, of course we need to pay to much for sauce that tastes just like every other sauce.
Solace in simplicity. ❤
❤
Pasta water and corn starch? Game changer! Thanks, Scott! ✌🏼🩵🙏🏼
clinty is so cute in this episode! patty cake! ❤
Very fun episode! I watched it 3 times🤭😅. A fan of all 4 of you. Your freestyle podcast is a great format. Please stay natural and not scripted. Pattycake for the win! Definitely seeking out Matrone Street sauce!
I really appreciate the cornstarch slurry/broth water/butter sauce tip 😋.
another great episode
I will definitely be trying. Looks delicious.
Omg great show …..laughing when Clinton told his hand shake story ……i watched this show twice …..Scott is so charming …hello from canada
Screaming at Clinton doing the "Bro Shake". 😂😂😂
Yummie
African-American culture influences so much. The "dap" (y'all calling it the "bro shake") was used in the 60s & 70s between service members in the military to acknowledge each other and show black pride.
Great show! Excellent recipe! Small bites and everyone were able to taste and talk.
I love Michael but sometimes he over speaks. Especially with Carla.
I don’t think I have ever laughed that loud alone in a room EVER ! So fun
I love Scott…did not know people thought he was mean😳. He’s one of my favorites. 👏🏾👏🏾🦋❤️❤️❤️
Who is the guy in the bushes?
Dimaris you licked your fingers then prepared food for the audience.. It's one thing with the chefs but for strangers😮
