Brother, friendly Filipino here. Fish sauce is a substitute for salt, and it also adds umami. Second, you can use brown sugar to make it sweet. UFC tomato sauce is a good choice, as well as banana ketchup. Don’t forget the cheese—add it after cooking everything; it’s the garnish.
Hey, new to the channel! Loving the videos! I just have one quick word of advice – you may want to look into non-metal utensils and a new pan. Nonstick is great. Works fantastic, cleans easy, the works. Just… don't use metal utensils. The nonstick coating is food safe, the metal the pan is made of is likely food safe, but the layer between them that holds the nonstick coating to the metal is toxic. Metal utensils scrape away the nonstick coating far earlier than its actual lifetime, and once the metal can be seen through the coating (which is what it looks like with your pink pan in this video, though it could be the lighting and some stuck-on stuff) it is recommended that you replace that pan as soon as you are able because that adhesive layer is leeching toxins into your food every time you cook. You can keep this from happening longer by using non-metal utensils.

Fish sauce is no shit the runoff from sardines. It's sardines and salt, left to ferment until you get that. It's useful in a lot of Asian cooking, but you really do gotta be careful with the stuff. Sometimes less really is more.
Bruh I could never understand Filipino spaghetti, its too damn sweet. I guess I have more of the poor boy Filipino palate, I like vinegary food. I do like me some mang tomas though and lechon. I'll stick to making sinigang once in awhile. If you think fish sauce smells bad try frying up some salted dried fish like mackeral, stuff is so tasty but god does is smell awful while cooking.
I love watching people have stuff that my great grandmothers made me before. Some of the most god awful things by themselves create some damned magical alchemy that just hits.
