I use a ricer for the potatoes, no lumps, great texture.
I grew up in California in the 70's. My mom always threw lovely cocktail and dinner parties. One of my favorite hors d'oeuvres growing up was Pickapeppa over cream cheese. It was amazing. I didn't know it could still be bought! Fantastic!

I make a cream cheese pinwheel rollup that's similar to the 1st dip: cream cheese, black olives, cheddar cheese, green chilies, green onions. Mix it all up and spread over tortillas that are then rolled up and cut into half inch slices. Favorite of get togethers 😋

In my younger years, the thing at our gatherings was a block of softened cream cheese, with coctail sauce poured over it, and then a couple of cans of tiny shrimp, or you could use bigger shrimp, your choice. It always gets finished. You could also do crab or smoked salmon.

Philly jalapeno cream cheese in grits, add as the grits cook. Philly, chipped beef, garlic, and onion powder, chop beef small add powders chill them form into ball. Best cheese ball ever.
