Did this one-pot bacon pasta tonight and it seriously hit the spot. Super creamy, a bit smoky from the bacon, and those sun-dried tomatoes add a really nice flavor.

Ingredients:

  • 6 oz (170g) bacon, chopped
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 tbsp tomato paste
  • ½ cup white wine (or broth)
  • 1½ cups vegetable broth
  • 1 cup heavy cream
  • 8 oz (225g) pasta
  • ½ cup grated Parmesan
  • Fresh basil
  • Salt, pepper, oregano

Steps:

  1. Cook pasta until al dente, drain and set aside.
  2. Cook bacon in a large pan until crispy.
  3. Add onion and sun-dried tomatoes, cook until soft.
  4. Stir in garlic, tomato paste, and wine, let it reduce.
  5. Add broth and cream, then mix in Parmesan and basil.
  6. Toss in pasta and mix until everything is coated.
  7. Serve with extra Parmesan on top.

Really easy to make and perfect if you want something comforting without too much effort.
