



Did this one-pot bacon pasta tonight and it seriously hit the spot. Super creamy, a bit smoky from the bacon, and those sun-dried tomatoes add a really nice flavor.
Ingredients:
- 6 oz (170g) bacon, chopped
- 1 small onion, finely diced
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 tbsp tomato paste
- ½ cup white wine (or broth)
- 1½ cups vegetable broth
- 1 cup heavy cream
- 8 oz (225g) pasta
- ½ cup grated Parmesan
- Fresh basil
- Salt, pepper, oregano
Steps:
- Cook pasta until al dente, drain and set aside.
- Cook bacon in a large pan until crispy.
- Add onion and sun-dried tomatoes, cook until soft.
- Stir in garlic, tomato paste, and wine, let it reduce.
- Add broth and cream, then mix in Parmesan and basil.
- Toss in pasta and mix until everything is coated.
- Serve with extra Parmesan on top.
Really easy to make and perfect if you want something comforting without too much effort.
