Coniglio in porchetta
Someone following Forgotten Italian Classics wrote me that their grandmother was still making this. They said bringing it back would make them very proud, and that stuck with me. So i did my researches and start cooking. It was not easy, but for sure worthy!

My nonno literally bought rabbits time to time out them in the garage in the winter and outside in the summer in his family house ( alongside pigeons, chickens and pretty much any small selvaggina ) and always played whit them … Meanwhile nonno gently but not the much he reminded me that he will be into my stomach really soon lmao

Rabbit needs to be a supermarket item.
There's so few places in Britain that serve rabbit anymore, and it's a shame. You can do incredible things like this with it. I had rabbit as primo in Bologna once, indescribably good.
