Most people see mozzarella as premium pizza cheese today. But the history of mozzarella is very different. In the Middle Ages in Italy, farmers made mozzarella from buffalo milk that spoiled quickly because they couldn’t store it for long. It was a cheap cheese made out of necessity, not luxury. The milk was curdled, heated, and stretched, then eaten the same day. Because it didn’t last long, mozzarella used to be local and inexpensive. Everything changed after World War II, when pizza spread globally and mozzarella suddenly became one of the most famous cheeses in the world.
