In Part 2 of our exploration into the nationwide dominance of New York’s Mexican restaurants, we visited three very different establishments. The first segment is a visit to Enrique Olvera’s restaurant, Cosme. Action is treated to a private Tlayuda party with the chef in the restaurant’s kitchen. After a lesson in tortilla crispiness and ant-based sauce, Action and Enrique sit down for some coffee. At the same time, Action tastes a late-fall tamale dish, discussing their grandmother’s penchant for borderline-rotten bananas and chicken pickings. A quick, but essential interlude at the NYC staple, Yummy Taco, brings us back to the foundation of Action’s love of Mexican cuisine, before we hit up a multi-course tasting menu at Corima, a Michelin-star restaurant from chef Fidel Caballero. Action takes down a barrage of never-before-seen Mexican-inspired dishes while standing with the chef in the kitchen on a busy Friday night. ¡Disfruta el espectáculo!
