🍄 Creamy Porcini Mushroom Risotto – Classic Italian Recipe
Fragrant, creamy, and incredibly delicate porcini mushroom risotto — a true classic of Italy and Italian cuisine that you can easily make at home.
In this recipe, I’ll show you how to achieve the perfect texture: al dente rice, silky creaminess without heavy cream, and a rich mushroom aroma. Porcini mushrooms add a deep, earthy flavor that pairs beautifully with Parmesan cheese.
This dish is perfect for a cozy dinner or a special occasion.
Ingredients (2–3 servings)
160 g risotto rice
1/2 small onion
50 g mushrooms
50–60 g dry white wine
~550 g light chicken or vegetable broth
20 g butter
50 g grated Parmesan
2 tbsp mascarpone
Instructions
Heat a piece of butter in a pan.
Sauté the chopped onion. Add the mushrooms (in my case, I used dried porcini that were soaked beforehand and then sautéed).
Add the rice and toast it until the grains become slightly translucent.
Pour in the dry white wine and let it evaporate while stirring with a wooden spatula.
Start adding hot broth gradually (4–6 times), cooking over medium heat. Avoid boiling too strongly, otherwise the grains may overcook.
When the rice is about halfway cooked, taste it — it should be soft on the outside but slightly firm inside (al dente).
Add mascarpone and grated Parmesan, stirring until the risotto becomes creamy.
✅ Tip: Perfect creamy risotto is achieved by cooking over moderate heat and stirring constantly.
