FULL PROFESSIONAL RECIPE (Chef Standard)
Ingredients:
โข 200g dried pasta
โข 2 litres water
โข 20g salt (water should taste like the sea)
โข Sauce of choice
Method:
1. Bring water to a rolling boil before adding pasta.
2. Add salt once boiling.
3. Add pasta and stir immediately.
4. Cook according to packet time minus 1 minute.
5. Reserve ยฝ cup pasta water.
6. Transfer pasta directly into sauce.
7. Finish cooking in sauce for 1โ2 minutes.
8. Adjust texture using reserved pasta water.
This gives true al dente texture.
