Ingredients:

Pork Cutlets, pounded thin
Mushrooms
Marsala wine
Flour
Butter
Olive oil
Eggs
Salt & pepper
Heavy cream

Directions:
In a pan add a large pad of butter followed by the sliced mushrooms and sauté
In a cast iron skillet start to heat a generous amount of olive oil
Set up a dredge station, scramble 3 large eggs and mix in some cream
Salt and pepper the cutlets then dredge through the egg cream mixture
Coat with breadcrumbs
Fry till golden brown and drain on paper towels
When mushrooms are done, add marsala wine and once all the alcohol is cooked off add a slurry to thicken up the sauce
Plate mushrooms first followed by the pork cutlets
Garnish with green onion, have a glass of red wine and bon appetite!
