10 Perilla Leaves
2-3 tbsp Mentaiko (Pollock Roe)
1 tsp Minced Garlic
3 tbsp Perilla Oil
2 tbsp Tsuyu Sauce
Plum Syrup
0.5 lbs Capellini Noodles
🔸Directions:⬇️
1. Start by removing the stems from the perilla leaves, then roll the leaves up and slice them into thin strips.
2. Scoop the filling out of the mentaiko with a spoon into a separate bowl. Add minced garlic and perilla oil to the filling and mix well.
3. In another bowl, combine perilla oil, tsuyu sauce, and plum syrup, mixing until smooth, then set aside.
4. Bring a pot of water to a boil and cook the capellini noodles until tender. Drain and rinse under cold water.
5. To serve, plate the noodles and arrange the sliced perilla leaves around them. Top with the mentaiko mixture, drizzle with perilla oil, season with pepper and perilla seeds, then pour over the prepared sauce. Mix gently and enjoy!
