Spaghetti alle vongole and pasta ai frutti di mare are two of Italy’s most iconic seafood pasta dishes. They look simple, and they are. But they are also incredibly easy to get wrong.
With recipes like these, there is nowhere to hide. A small mistake in ingredient choice or one missed step in technique can completely change the final result. The difference between a light, flavorful seafood pasta and a watery, disappointing one often comes down to details that most people overlook.
In this video, Eva shows how these classics are really made, focusing on the quality of the seafood and the crucial technique that brings everything together properly. When done right, they are some of the best and most satisfying pasta dishes you can make!

I'm Italian and my passion is cooking. I recently went to a dietician who naturally gave me a diet to follow as I'm 10 kilos overweight. How can someone as passionate as me about cooking can possygo on a diet? I LOVE FOOD !!! Maybe mañana? 😂😂😂😂😂
I had made boullibaise a while back, everyone knows it doesn't keep. So I strained the broth the second day and froze it. Did a multi seafood pasta with 5 types of Crustians and fish (white). Made a papadella and tossed everything with EVOO and white wine. Soooooo delicious. 😊
I'm watching this despite a shellfish allergy
I’m amazed how little garlic she uses.
Ava your glowing!!
Why still put in the shells, wont it still add some grit?
Is it acceptable to use canned clams for the spaghetti alle vongole?
We call little clams pippi’s in Australia, I can’t eat them as I’m allergic to all shellfish but I’m not that sad about it 😂. I LOVE Eva’s apron 🤌❤
Beans and greens? I use escarole for the greens. And the last fish dish? use scallops instead of the calamari. It's so great that these meals can be adapted for personal tastes quite easily, and still taste terrific. Thank you for sharing these dishes with us.
Loose the nose ring, please, it's just a distraction, really, and a thing you don't carry out into some age group.
do a show about kobe bryant's favorite restaurants in calabria.
Wouldn’t the sand go through the strainer? I’d strain it through cloth. Just a thought.
Thank you for this video. I love the pipi clams we can find on some beaches in western Australia. My last memory was collecting them with my best mate in Albany. RIP, Drew.
Can you please make a back squid dish with garlic rice? I don't know if it exists in Italia, but the one I had in Spain was to die for!!!
keep the shells boiling in the clam liquid
No parsley while cooking..?
Oh? You LIVED in TUCSON?! Geez. If I had known about your channel sooner than my return to Germany in 2017, we could have bumped into each other. I lived there off and on for 15 years starting in 2002. I bet you love Italy, too. I miss the desert! The Spaghetti alle Vongole is one of MY favorite dishes. But, I've been dying to make the Pasta ai Frutti di Mare. I'll try and recreate it now! Mille Grazia for posting this recipe!
I’m surprised you didn’t use pasta nera with the frutti di mare
If I have to leave out the wine what would you use as a substitute …hope Eva is feeling well
I've seen this dish made with a Linguine pasta as well. I myself prefer the Linguine pasta.
Use Moscato as the wine with the clams dish and thank me later
Pasta alla vongole is probably my favourite one and yet its not always as perfect as it seemingly should be. Same time i am so scared of making it that i have never done it… until now – Eva, you made it seem so effortless, i will give it a shot! Grazie mille!
❤ you guys! This is totally off the food subject. I was wondering if Papa news about Italian knife fighting. It's pretty interesting, here's a clip.

how long can you really cook those clams before they get rubbery
The most delicious pasta dish I've ever had was spaghetti with razor clams, enjoyed at an Italian restaurant in Nice. Absolute ambrosia. It seems to me it was likely prepared exactly as Eva prepared her spaghetti alla vongole, except with razor clams.
This is Frutti di mare ❤. And it look delicious.
I saw an Italien guy called Vincenzo make a Pasta Marinara. He’s no way near your cooking’ skills. And if you ever meet him, please teach him how to shuffle the pan!! There was tomato sauce everywhere 😂
My favorite pasta with seafood is simply, pasta with calamari & onions in a tomato sauce with red wine and spices.
Clams must be in the shells when you make this dish!
I am thrilled that I use the same pasta that Eva does! GaroFalo is available at my local Costco. Simple things make me happy.
There are many other seafood pasta recipes, and some of them a cooked on tomato sauce.
I forgot the name.
My dad was a commercial fisherman & we ate a lot of seafood pasta growing up, including pasta with clams. It’s my favorite actually.
