STORYLINE:
Olympic fans filling the street of Cortina d’Ampezzo were getting a sweet treat Tuesday: apple fritters.
Unlike other Italian pastries that appear year-round in bakery windows, apple fritters in Cortina are tied to the last day of Carnival, Shrove Tuesday, when people consume fatty food before starting Lent.
“The characteristic of this dessert is that it must be eaten as soon as it is made,” pastry chef Massimo Alverà told the Associated Press.
“It’s fried, so it must retain the crispiness of both the batter around it and the apple inside.”
Apple fritters need to be freshly made – and eaten quickly – because as it cools, the crackling exterior starts to soften.
Apple rings are dipped in a traditional batter, which includes extra virgin olive oil and some beer, and fried in peanut oil, producing a crisp shell that seals in the fruit’s softness and creates a balance between the two textures.
That means the pastry shop is not preparing huge batches in advance, but cooking the fritters as the shop begins to run out.
