MOZZARELLA STUFFED ITALIAN MEATLOAF-5 WW BLUE PTS PER SERVING
This is a wonderful and easy main dish. I use to make this when I was 80 pounds heavier but of course the points were a lot higher, more calories and no portion control. Now that I’ve been at WW lifetime for 19 months, I’ve learned I “CAN” cook and enjoy making healthier lighter recipes that are WW friendly. I’ve tweaked this recipe to make it lighter in points but AMAZING! This is a lifestyle, not a diet, there is NO finish line so enjoy the ride.
THIS RECIPE MAKES 4-6 SERVINGS. I MADE IT IN THE INSTANT POT AIR FRYER OVEN. IT TOOK HALF THE TIME TO BAKE, ONLY 25-30 MINUTES.
INGREDIENTS:
1 POUND OF EXTRA LEAN GROUND BEEF 96% LEAN, 4 % FAT
1 EGG
¾ CUP KIKKOMAN PANKO BREADCRUMBS
2 TSP MINCED GARLIC (DIVIDED)
1 TSP BASIL
1 TSP OREGANO
1 TSP PEPPER (DIVIDED)
1 TSP SALT (DIVIDED)
¼ PLAIN UNSWEETENED ALMOND MILK
2 TBSP WORCESTERSHIRE SAUCE (DIVIDED)
½ CUP FINELY CHOPPED ONION
3 OZ. KRAFT FAT FREE SHREDDED MOZZARELLA CHEESE
4 SLICES OF DELI THIN LEAN HAM (mine was honey baked, up to 6 slices-1 pt)
16 TBSP G.HUGHES SUGAR FREE KETCHUP (I get this from Walmart)
1 TBSP RED WINE VINEGAR
PINCH OF CAYENNE PEPPER
¼ CUP SWERVE OR SUKRON GOLD BROWN SUGAR – SUGAR FREE
DIRECTIONS:
Preheat the air fryer oven to 350 degrees.
IN A LARGE BOWL MIX THE FOLLOWING INGREDIENTS TOGETHER WITH A LARGE SPOON OR EVEN BETTER—-WITH YOUR HANDS. 1 LB. EXTRA LEAN GROUND BEEF, 1 EGG, ¾ CUP BREAD CRUMBS, 1 TSP OF THE MINCED GARLIC, 1 TSP BASIL, 1 TSP OREGANO, ½ TSP SALT, ½ TSP PEPPER, ¼ CUP UNSWEETENED ALMOND MILK, 1 TBSP WORCESTERSHIRE SAUCE, ½ MEDIUM ONION-FINELY CHOPPED. AFTER MIXING TOGETHER SCOOP THE INGREDIENTS OUT ONTO PARCHMENT PAPER OR WAX PAPER. WITH YOUR FINGERS SPREAD AND FLATTEN OUT THE MEAT MIXTURE INTO A RECTANGLE SIZE. PUT THE HAM SLICES ON TOP-LEAVING AN INCH AWAY FROM ALL THE EDGES, ADD THE SHREDDED CHEESE ON TOP OF THE HAM. CAREFULLY ROLL THE MEATLOAF UP INTO A ROLL. PINCH AND SEAL ALL THE EDGES TOGETHER.
PUT A PARCHMENT ROUND SHEET ON THE BAKING RACK, LIGHTLY SPRAY WITH A NON-STICK SPRAY. CAREFULLY ROLL THE MEATLOAF OVER ONTO THE BAKING RACK.
IN A SMALL MIXING BOWL, WHISK TOGETHER THE SAUCE INGREDIENTS. 1 CUP OF SUGAR FREE KETCHUP, ¼ CUP BROWN SUGAR REPLACEMENT LIKE SUKRON GOLD OR SWERVE, 1 TBSP RED WINE VINEGAR, 1 TSP MINCED GARLIC, 1 TBSP WORCESTERSHIRE SAUCE, ½ TSP SALT, ½ TSP PEPPER, PINCH CAYENNE PEPPER. POUR HALF OVER MEATLOAF, RESERVE REMAINING HALF FOR LATER.

PUT MEATLOAF ON THE BOTTOM SHELF IN THE AIR FRYER OVEN. BAKE 25-30 MINUTES (ROTATING AROUND HALFWAY THROUGH FOR EVEN COOKING). IT’S BEST TO USE A MEAT THERMOMETER. WHEN THE MEAT READS 160 DEGREES THEN IT’S DONE. REMOVE AND TRANSFER TO A PAN SO YOU CAN ADD THE REMAINDER OF THE SAUCE ON TOP. THEN BAKE AROUND 5 MORE MINUTES, MOVING TRAY HIGHER UP. TAKE OUT AND LET IT SET FOR 5-10 MINUTES (so the cheese doesn’t run out, 5 minutes was good for me). Carefully slice, I got 7 nice size slices out of mine, so our serving size was around 1 ½ slices for 5 WW blue points. I rate all my recipes 1-5, I would give this one a 9 or 10 ….IT IS AMAZING!
