Creamy One‑Pot Chicken Penne with Spinach
Ingredients:
1–2 lb chicken breasts
Seasoning salt
Minced garlic
Italian seasoning
2 1/4 cups chicken broth
1 can diced tomatoes with green chilis
5 cups penne pasta
1/2 cup yogurt/water mixture (or heavy cream)
1 tbsp cornstarch
2 cups spinach
Parmesan cheese
Instructions
1. In a large saucepan over medium‑low heat, sear the chicken and season with seasoning salt.
2. Once golden, add Italian seasoning and minced garlic.
3. Pour in chicken broth and diced tomatoes with green chilis.
4. Cook chicken until it reaches 165°F, then remove and set aside.
5. Add pasta to the pan and cook until al dente.
6. Whisk the yogurt/water mixture (or heavy cream) with cornstarch and add to the pan.
7. Add the cooked chicken back in along with parmesan cheese.
8. Stir in spinach until wilted and sauce is creamy.
