1st course. Hamachi crudo. Coconut. Kaffir lime. Lemongrass. Cilantro.
2nd course. Little neck clams. Calabrian chili. Thai basil. Lime.
3rd course. Filet mignon. Entrecôte sauce. broccolini. Oyster mushrooms. Roasted potatoes. Pea shoot salad.
Dessert. Passionfruit tart with toasted meringue.

  5. Is there a written down recipe for te potatoes? I’ve tried reverse engineering them, and although everybody who eats them, loves them, I can never get them nice and super crispy without burning them, or they’re still falling apart and have no form.
