Have you ever had beef ossobuco cooked this way? 🇮🇹 Slow-braised beef in a delicate, silky broth. This Italian comfort food classic is traditionally made with veal, but beef ossobuco is just as delicious and incredibly easy to make. The combination with peas and a touch of butter creates a rich, savory finish!
Ingredients:
3 beef ossobuco
Olive oil
Light flour for dusting
1 carrot, diced
1 celery, diced
1 small onion, diced
1/4 cup white wine
2 and 1/2 cups vegetable broth
1 cup peas
Knob of butter
Salt & black pepper
2 bay leaves
Directions:
1. Lightly dust the ossobuco with flour. Heat olive oil in a wide pan over medium heat and sear the beef on both sides until golden.
2. Pour in the white wine and let it simmer until fully evaporated.
3. Add carrot, celery, and onion directly into the pan. Cook gently until softened. Season with salt, pepper, and bay leaves.
4. Add the hot vegetable broth. Cover partially and cook on low heat for about 1½ hours.
5. Add peas and a knob of butter. Cook another 25–30 minutes until the broth tightens and the beef is tender.
