In this episode, we visit I Buonatavola, one of the very last producers still making Pecorino Romano in Lazio, the cheese’s original territory, to understand how global demand, especially from the United States, reshaped where and how this cheese is made.   1. Its so interesting watching this. As someone who grew up poor in nyc. My grandma always used Pecorino Romano because it was more affordable compared to Parmigiano-Reggiano but still had amazing flavor. I wonder how they compare now price wise. Either way awesome cheese and very cool to see it made!

    Ingredients

    Wild rocket
    Celery stalk x 2
    Lemon
    Pecorino Romano
    Prosciutto di Parma
    Extra virgin olive oil
    Walnut oil
    Black pepper

    Preparation

    Cut the celery stalks on the bias
    Plate the rocket and celery
    Drizzle with olive oil and the juice of half a lemon
    Grate pecorino over
    Layer the prosciutto on top
    Dress with walnut oil and grated black pepper
