I hope you guys enjoy this one! Chicken Scarpariello is known to be pretty popular in New York and New Jersey. It’s an Italian-American dish made with chicken, sausage, and hearty potatoes in a zingy cherry pepper-white wine sauce. I find it’s easy enough for a weeknight meal but elevated enough to serve to guests or as a Sunday dinner for your family.
This dish has a bit of spice to it, but don’t worry, I don’t like spicy, so I can vouch that it’s not too spicy! It’s just right. I hope you enjoy this one!! It not only tastes great but is a meal in one pan.

Ingredients
2-3 sweet Italian sausagelinks
3 Tablespoons olive oil, divided
6 chicken thighs, bone-in with skin
2 large shallots, minced
10 garlic cloves sliced
3/4 cup dry white wine, pinot grigio or similar
1 large rosemary sprig
1 cup chicken stock
3 Tablespoons cherry pepper brine from the pepper jar
1/3 cup hot cherry peppers
1/4 tsp garlic powder
1/4 tsp onion powder
3-4 medium-size red potatoes, quartered
2 Tablespoons chopped parsley
kosher salt and black pepper

Both my parents came to taste which was fun😅 I didn’t add bell peppers to this, even though it’s traditional, but I felt it was great without them. Add them if you like! And also add more sausage if you like, you can cut them into smaller pieces to make them fit. I just did them bigger for the photography aspect haha. Enjoy!!

Hi Bethany it’s so nice to see your Mom and Dad, how lucky to have them down the road. When my parents were alive they lived 10 minutes by car away. Cherish them I miss mine. This looks delicious I will try making it. Is that a Staub pan? We love Staub cookware in this house. My son and I cook together a lot and use our Staubs a lot.
