✨Ingredients
• 8 chicken legs (or any chicken pieces you prefer)
• 1 large bell pepper (green or red), cut into thick slices
• 1 large onion, cut into thick slices
• 4 garlic cloves, minced
. 3 potatoes cut up
.3 carrots cut up
• 2 tablespoons olive oil
• 1 knob of butter
• Salt and pepper, to taste
• 1 tablespoon Italian seasoning
• ¼ cup white wine
• 1 tablespoon capers
• 1 teaspoon sugar
• 1 jar (about 24 oz) passata tomatoes (or any tomatoes you like)

Instructions
1. Season the chicken
Pat the chicken dry and season generously with salt and pepper only.
2. Brown the chicken
In a large skillet or Dutch oven, heat the olive oil and butter over medium heat.
Add the chicken and brown on all sides until golden. Remove and set aside.
3. Sauté the vegetables
In the same pan, add the sliced onions and bell peppers. Cook until softened and slightly caramelized, about 5–7 minutes.
Add the minced garlic and cook for another minute until fragrant.
4. Deglaze with wine
Pour in the white wine and let it simmer for 2–3 minutes, scraping up all the flavorful bits from the bottom of the pan.
5. Add the tomatoes & seasoning
Pour in the jar of passata.
Stir in the Italian seasoning, capers, and sugar. Mix well and bring to a gentle simmer.
6. Simmer together
Return the chicken to the pan. Cover and simmer on low for 40–45 minutes, until the chicken is tender and the sauce is rich and thick.
7. Taste and adjust
Adjust salt and pepper if needed.
