You mean we can have pasta but it’s zucchini? Where has the spiralizer been all my life?! Simple and delicious— thanks to my @kitchenaid Spiralizer Attachment. Marcela Hazan’s famous three ingredient sauce is so easy and so good— you will be a hero. Yum. #KitchenAidAmbassador

Marcella Hazan’s Tomato Sauce & Zucchini Noodles

Ingredients:
– 1 (28 oz) can San Marzano whole peeled tomatoes
– 5 Tbsp butter
– Onion, peeled & cut in half
– Salt
– 4 small zucchini
– 1 clove garlic, minced
– Olive Oil
– Dried Thyme & Rosemary
– Fresh ricotta cheese
– Shaved parmesan cheese

Directions:
1. Combine tomatoes, their juices, butter and onion halves in a saucepan. Add a pinch or two of salt.
2. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
3. Discard the onion before tossing the sauce with pasta or “pasta.”
4. Meanwhile, while cooking, use your KitchenAid® Spiralizer Attachment to create ribbons of zucchini noodles.
5. Drizzle olive oil in a sauce pan. Add garlic and zucchini noodles. Sauté until soft, ~4-5 minutes. I added dried thyme and rosemary (and a pat of butter 🤫😬). Remove from heat.
6. I quickly used my KitchenAid® 7 Qt Bowl Lift Stand Mixer to whip some fresh ricotta.
7. Combine zoodles and tomato sauce in a bowl. Top with a dollop of whipped ricotta and shaved parmesan.
8. Yum.

  2. NOPE. Zucchini is the mosquito of the vegetable world. Just use pasta. The Chinese and the Italians have been using pasta for millennia. They can't be wrong.

  4. I used to make zoodles when my boys were toddlers and didn’t wanna stuff them with pasta right away. They looooooved it. Even now that they are older they eat them. And it’s great low carb or gluten free option for people

  5. I don’t have the spiralizer attachment YET but I have this other veggie attachment that makes zucchini lasagna sheets.

    Made the best low carb, gluten-free grilled zucchini lasagna!

  6. Sprinkle your zoodles with salt and rest in a colander for ten minutes. Then squeeze dry. That keeps them from getting soggy.

  8. My friend gave me a great tip when I got my first Dutch oven: never use high heat with them, just med/high at most. This way the ceramic on the inside won’t crack or break off revealing the iron underneath and of course no burnt meals…hopefully. 😄

  9. You can do the same sauce but with spaghetti squash. Thanks for the reminder I forgot about zucchini noodles. I love watching the pretend cooking show
