Sausage Stuffed Mushrooms 🍄🟫
AKA: “The fancy ones your uncle eats six of before dinner.”
You’ll need:
• 16 oz mushrooms (white or cremini)
• ¾ lb Italian sausage (mild or hot — dealer’s choice)
• 2 tbsp butter
• 3 cloves garlic, minced
• ½ cup finely chopped mushroom stems
• ¼ cup breadcrumbs (Italian-style preferred)
• ½ cup grated Parmesan
• ¼ cup cream cheese
• 2 tbsp chopped parsley
• Pinch of crushed red pepper flakes (optional, but highly encouraged)
• Salt & pepper to taste
How You Make Them
1. Prep the mushrooms
• Remove stems and finely chop.
2. Cook the sausage & onions
• Brown sausage with the diced onion until fully cooked.
• Drain excess fat if needed.
3. Build the filling
• Add the softened, cubed cream cheese and let it melt into the sausage.
• Add the chopped mushroom stems and cook 2–3 minutes until softened.
• Stir in the mozzarella, breadcrumbs, and parsley.
• Season with salt, pepper, and optional red pepper flakes.
• The mix should be creamy but scoopable — add more breadcrumbs if too loose, more cheese if too tight.
4. Stuff the caps
• Spoon a generous mound of filling into each mushroom.
5. Bake
• Bake at 400°F for 18–20 minutes until tops are golden and mushrooms are tender.
6. Finish
• Add a sprinkle of parsley or Parmesan if you want them extra fancy.

Been making something similar. Put down a bed of mashed potatoes , keeps the shrooms from drying out.
