🛒 Ingredients (Serves 4)
For the chicken
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
½ tsp paprika
For the potatoes
1½ lb baby potatoes, halved
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp Italian seasoning
For the garlic Parmesan topping
4 tbsp unsalted butter, melted
4 cloves garlic, minced
½ cup grated Parmesan cheese
2 tbsp fresh parsley, finely chopped
👩‍🍳 Instructions
Preheat oven to 400°F. Line a baking sheet or pan with foil and lightly grease.
Toss potatoes with olive oil, salt, pepper, and Italian seasoning. Spread evenly on the pan.
Roast potatoes for 15 minutes to give them a head start.
Season chicken with salt, pepper, garlic powder, and paprika.
In a bowl, mix melted butter, garlic, and Parmesan cheese.
Push potatoes aside and place chicken on the pan. Spoon garlic Parmesan mixture over each piece.
Return to oven and bake 20–25 minutes, until chicken is cooked through and potatoes are golden.
Broil for 2–3 minutes for extra color if desired.
Sprinkle with fresh parsley and serve hot.
