One-Pan Sausage & Crispy Potatoes
This one-pan sausage and potatoes recipe is pure comfort food made easy. Golden potatoes, juicy sausages, and sweet peppers all roasted together until perfectly caramelized. Simple ingredients, big flavor, and minimal cleanup — a total weeknight win.
Ingredients (Serves 4)
For the Sausage & Potatoes
1 ½ lb baby potatoes, halved
1 lb Italian sausage links (mild or spicy)
1 red bell pepper, sliced
1 small onion, sliced
3 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 400°F and lightly grease a large baking dish or skillet.
Add potatoes, bell pepper, and onion to the dish. Drizzle with olive oil and season with paprika, garlic powder, oregano, salt, and pepper. Toss well.
Nestle the sausage links between the vegetables.
Bake uncovered for 40–45 minutes, flipping sausages halfway through, until potatoes are fork-tender and sausages are browned.
Sprinkle with fresh parsley and serve hot.

Serve with crusty bread to soak up the juices
