Order of operations looks weird here. Spinach is cooked in like half a pound of butter and then all of it is poured off and strained? Why? Just blanch, strain, and add to a couple tbsp butter/garlic after instead of pouring $5 of butter down the drain. Maybe just an editing mix-up
Tear some cured meat (breseola, parma ham, whatever) on their, big slices of crusty chewy rustic bread slabbed with cold butter and decent flaked salt, that's a great dinner!
