TARALLI RECIPE

INGREDIENTS
4 cups all-purpose flour
1 cup dry white wine
3/4 cup olive oil
2 tsp salt

OPTIONAL (choose one)
1 to 2 tsp fennel seeds (classic)
or cracked black pepper
or chili flakes

INSTRUCTIONS
1. In a large bowl, mix flour and salt.
2. Add olive oil and wine. Mix until a smooth, firm dough forms.
3. Cover and let rest for 20 to 30 minutes.
4. Roll dough into pencil-thin ropes about 5 to 6 inches long.
5. Form into small rings and pinch ends together.
6. Bring a large pot of water to a gentle boil.
7. Drop taralli in batches. When they float, remove and drain on a towel.
8. Place on a parchment-lined baking sheet.
9. Bake at 375 F (190 C) for 25 to 35 minutes, until golden and crisp.
10. Cool completely. They harden as they cool. This is normal.

TIPS
For extra crunch, bake a little longer at 350 F.
Store in an airtight container. They last weeks.
Traditionally enjoyed with wine, espresso, or olives.

    WOW. My nonna, dad’s mom, taught my mom how to make the sweet version of taralli along with the savory version. I still make them today. We loved to help make different shapes when we were kids. We roll them the same way, but we would also make different shapes. Straight ones, twisty ones, we even made our initials. My boys loved to help my mom make them. Everyone loves them, especially the sweet ones.
