  1. Roasted Tomato Pasta 🍝
    
One bite and you’re transported straight to Italy 🇮🇹

    Ingredients:
    * Tomatoes
    * 1 head of garlic
    * Parmesan cheese
    * Fresh basil
    * Ricotta cheese
    * Olive oil
    * Pasta of choice
    * Salt & pepper, to taste

    Instructions:
    1. Preheat oven to 400°F.
    2. Cut tomatoes in half.
    3. Arrange tomatoes and garlic on a sheet pan. Drizzle with olive oil and season with salt and pepper. Roast for 20 minutes, then finish with a quick low broil until lightly charred.
    4. Meanwhile, bring a large pot of salted water to a boil and cook pasta according to package instructions.
    5. Transfer roasted tomatoes and garlic to a blender. Add basil, ricotta, salt, and pepper. Blend until smooth and creamy.
    6. Toss sauce with pasta, top with Parmesan, and enjoy 🤍
